A healthy Super Bowl snack, why yes!

It just so happens that you can cook healthy and tasty food for Super Bowl Sunday. An expert in heart healthy meals will be on Ron & Don talking about some of their healthy cuisine. So on Sunday, why don't you try some Summer Dungenss Crab Gazpacho!

2 C. red tomatoes
½ C. diced peeled English cucumbers
½ C. minced celery
½ C. each diced yellow and red bell peppers
2 seeded and diced red jalapeños
½ each sweet yellow onions diced
1 T. chopped FRESH garlic
1 ½ T. chopped fresh Thai basil
1 T. chopped fresh tarragon
2.5 cups of V-8 juice
1/8 C. fresh lime juice
1 T. lemon extra virgin olive oil
1 T. White balsamic vinegar (or apple cider vinegar)
Pinch of sea salt (you may not need this)

Use this soup as a base. Spoon into small flat soup plate. Sprinkle 2 oz. of fresh Dungeness crab on top around in the bowl. Garnish with freshly chopped basil or a sprig of opal basil. You may add more crab if this is going to be an entrée.
6-8 appetizer portions or 3 entrée portions
