Beecher's grilled cheese sandwich on the rocks
It's a grilled cheese martini. I'm serious.
Beecher's owner Kurt Dammeier says he had no idea he'd be designing a drink until he opened the company's New York location.
"Our restaurant in New York has a real kind of cocktail lounge with great food feel to it," he said. "We really wanted to create a signature cocktail we could be known for."
And this is no martini with stuff thrown-in to make it taste like a grilled cheese sandwich. Dammeier made the vodka taste like his popular sandwich.
"Ten bottles of vodka," he said. "Then just chop-up and throw in six grilled cheese sandwiches, kind of stir it together and let it steep for overnight, about 24 hours."
Beecher's then strains the sandwich-infused vodka multiple times before putting it in the freezer. The fat rises to the top, and it's scraped-away. You're left with a distinctly yellow and slightly cloudy vodka that tastes like a grilled cheese sandwich. It's mixed with tomatoes, muddled basil and tomato juice before being poured over a tomato juice ice cube. The glass is garnished with crispy prosciutto.
You can get a taste of this sandwich on the rocks at Bennett's Pure Food Bistro on Mercer Island, but it won't be around for long. It's really designed for Beecher's New York crowd.
And Dammeier said he has no plans to become the Jones Soda of cheese flavored cocktails.
