Matt Dillon to open Bar Sajor, London Plane in Pioneer Square

Following in the footsteps of other Seattle James Beard-award winners, Matt Dillon, owner of Sitka & Spruce, is opening another restaurant.

This time it’s in his favorite Seattle neighborhood, known for it’s brownstone courtyards and charming appeal. Dillon has always loved Pioneer Square.

“Me, growing up in Seattle, I was just kind of frustrated with it myself,” he said of Pioneer Square. “I wish it was cooler, there were more things to do.”

So he’s a joining a bigger movement, reviving the area with two businesses of his own.

Dillon’s Bar Sajor will debut this January, with London Plane to open sometime after.

London Plane is a creative space with Melrose Market merchant Katherine Anderson’s flower stuff, and our pastries and bakery, Dillon told KIRO Radio’s Let’s Eat.

The space will be retail, with a cafe serving lunch. It’s in the old Seafirst Bank of America building. Down the street they will offer a private dining space that businesses can use for meetings or small parties.
