The Seattle Kitchen staff explains how to take that classic side dish to the next level.

Tom Douglas: I'm a dressing on the outside of the bird guy. I like it in a casserole so it gets crispy edges and tops. To make it extraordinary, if you can find Chanterelle mushrooms, chop them up, saute them with butter and sprinkle them through your stuffing. It creates a real nice aroma to your stuffing.

Thierry Rautureau: It's all about baking on the side, put it in a dish. Put some nice garnish. I would even add a couple huckleberry sprinkled in there so you have a nice bit of moisture that gets added to it and a little bite to it.
