What to Know About Sabine Café and Bar’s New Downtown Bellevue Location

Downtown Bellevue will be home to a second Sabine Café and Bar location, scheduled to open in mid-July, the Downtown Bellevue Network recently reported.

It will be located in The Eight, an office tower at 10666 NE 8th St. According to the DBN article, it will occupy roughly 3,000 square feet on the building’s ground floor and seat about 50 guests indoors. There will also be outdoor seating on the plaza, private dining areas, and lobby seating reserved for grab-and-go visitors. 425 initially published a story about the expansion in April 2025.

The Mediterranean- and Middle Eastern–inspired café first opened in Seattle’s Ballard neighborhood in 2020. The menu, featuring dishes made with seasonal ingredients sourced from Pacific Northwest farms, foragers, and producers, was developed by executive chef and operating partner Jacob Dunkelberger, according to the article.
