Bellevue’s Water Grill Shifts Focus to Northwest Oysters

It goes without saying that the Pacific Northwest is known for its oysters: More than 65 distinct varieties are grown and available in the region at various times of the year.
Bellevue’s Water Grill recently announced that it’s refocusing its raw bar to showcase the local delicacy. Known for specializing in all things seafood, Water Grill will continue its seasonal offerings from different regions, but the shift toward local oysters is making the Bellevue location unique from other locations. The shift is part of a company-wide initiative where other Water Grill restaurants will dedicate part of their menu to a local specialty item while continuing to serve guest favorites.
Chef Kaelon Sparks has built out the program, and his team has educated themselves over the delicate flavor and nuance of Pacific Northwest oysters. While grown in the same overall region, each oyster variety develops distinct flavor profiles and salinity levels, producing that signature fresh taste of the sea people crave.
Water Grill’s updated raw bar will regularly shift with what’s fresh and available, giving guests the latest and greatest selection of oysters by local suppliers.
