A famous NYC bar makes its Seattle debut Thursday

Death & Co, the famed East Village bar, is bringing its 20-year cocktail-making legacy to Seattle with a new location in Pioneer Square, set to open Thursday.

Wanting to embody a sense of place in the historic RailSpur Alley along Occidental Avenue, as well as maintain a reflection of the bar’s venerated history, this iteration of Death & Co heralds a refreshed look that sets the space apart from its other six locations. The cocktail menu is simpler and more focused, and the menu of small plates leans on regional ingredients and flavors familiar to the Northwest palate.

Twelve new cocktails are premiering as part of the bar’s opening, featuring signature drinks like the Uwajima Gimlet, which mixes classic London dry gin and a ginger shochu. The bar menu is sectioned off in chapters that include new seasonal drinks, classic standards, reserve, beer, wine and spirits, and a zero-proof menu.

Composed with the same attention to detail that has garnered Death & Co national recognition as one of the flagship bars behind the craft-cocktail movement, the Seattle location touts the local talents of General Manager Curtis Hayes (Canon) and Bar Manager Julian Abel (The Hideout).

Founder David Kaplan, who now calls Seattle his home, has spent five years becoming attuned to the local scene.

“We’ve always believed that every Death & Co should be a reflection of the community it’s joining, not a replica of anything we’ve done before,” Kaplan said. “Pioneer Square captures that perfectly. The neighborhood has a history and architecture that harkens to New York, but it’s also unmistakably Seattle — with the water, the natural beauty, the creativity, and a genuine appreciation for craftsmanship and hospitality. Death & Co will be open from 4 p.m. to 11 p.m. Sunday through Wednesday and 4 p.m. to midnight Thursday through Saturday. Reservations can be made online here.
