1889 Prime Steakhouse Turns 3, Names New Executive Chef

After 1889 Prime Steakhouse opened its doors in Olympia in 2023, South Sound magazine reported on the restaurant’s aim to bring elevated Northwest dining and hospitality to the region. Three years later, that vision is continuing to thrive as the award-winning steakhouse celebrates its third anniversary while welcoming a familiar face to lead its kitchen.

Chef Joe Rumberger has been a featured chef in our pages before, too, both for his culinary journey as the owner of Bastard Pies in Tumwater and the former Bar C’est L’eau, where his ingredient-driven approach to Pacific Northwest cuisine earned widespread recognition. Now, he’s beginning a new chapter as 1889 Prime’s executive chef.

Rumberger is bringing more than 25 years of culinary experience — which includes working with local farmers, rances, and seafood producers and spans further beyond in the United States and Europe — to his new role.

“I’m incredibly excited to join the team at 1889 Prime,” Rumberger said in a press release. “This region produces some of the finest beef, seafood, and artisan products anywhere in the country. My passion has always been working directly with local farmers and ranchers to create food that tells the story of where we live. Together, we’re building a steakhouse experience that celebrates the Pacific Northwest while delivering the timeless quality and hospitality guests expect from a premier steakhouse.”

Throughout August, 1889 Prime will be celebrating its third anniversary with special menu offerings, employee spotlights, and events recognizing the guests and community who have supported the restaurant since its opening.

“This anniversary is really about gratitude,” owner and managing partner Drew MacEwen said in the release. “We’re grateful for our guests, our incredible team, and our community. Welcoming Chef Joe at this moment gives us the opportunity to celebrate where we’ve been while looking ahead to an exciting future.”
