Popular Seattle diner chain shuts down half of its locations, including in Capitol Hill and Post Alley

Skillet, a popular diner chain specializing in breakfast, has announced that it is closing half of its Seattle locations.
The Skillet locations that are going to close are the ones located in Capitol Hill, Post Alley, and Regrade. The Capitol Hill and Post Alley locations are already closed, while the Regrade location is expected to close next month.
“What began in a wobbly Airstream on the streets of Seattle grew into a community we could’ve never imagined,” Skillet’s leadership team wrote. “Skillet has been a labor of love — fueled by creativity, great food, and all of you. As times change, we’re making the tough decision to close three of our restaurants.”
Two of the remaining locations are within the Seattle-Tacoma International Airport (SEA), at the N Terminal and C Concourse. The third Skillet location that will remain open is at The Seattle Center Armory.
Beyond its breakfast, the chain is famous for serving burgers slathered in its unique “bacon jam.” The condiment became so popular, people began publishing recipes attempting to imitate Skillet’s specific bacon jam.
“Times change, and it is now time to shrink the Skillet footprint,” the Skillet team wrote. “Like many other businesses, we have been unable to survive the balance of what we can charge for a meal with the increasing costs of what it takes to produce a meal. As a result, we have made the decision to close three of our restaurants.”
Skillet was first established in 2007.
