‘Only left it there a couple hours’: Spike shares homemade soup after leaving it in his car

After a recent trip to a small town in Ireland, KIRO host Spike O’Neill brought a bit of the country back with him, transforming “The Jake and Spike Show” studio into a cozy restaurant reminiscent of ones he visited.

“I thought you guys could use a moment of nice, warm soup,” Spike said. “And I promised that I would share the recipe. Would you like some fresh sourdough with that?”

“Oh, that’s lovely. It’s kind of cold outside, too. So you actually made soup and brought it in. That’s nice,” co-host Jake Skorheim responded.

“My wife and I were in the country, down in Avoca, Ireland, which is in the south of the country. We found this soup at a restaurant, and we loved it,” Spike said. “We kind of harangued the inn owner to share the recipe with me. I make it a little bland because the missus enjoys it a little bland.

“Isn’t that great? It’s a warm, wonderful soup. Try it with the bread, it’s wonderful. Dip that bread in there,” Spike continued. “I thought you guys could use a little hug from the inside, an Irish hug today.”

Along with Spike’s kind gesture to the show, he chose to share the wonderful soup recipe with all the readers as well.

Spike’s Co. Wicklow Irish Vegetable Soup Recipe:

• 2 quarts Vegetable Stock
• 1 quart Chicken Stock
• 5 Medium Carrots
• 1 Large Leek
• 1 Red Bell Pepper
• 2 cups Red Potatoes
• 2 Large Broccoli Crowns
• 6 Large Garlic Cloves

Peel and slice carrots and leeks. Sauté with pepper and minced garlic until lightly caramelized. Add vegetable/chicken stock to a stockpot along with diced potatoes and broccoli florets. Add caramelized veggies and bring to a boil. Let it cook over medium heat for 90 minutes. Puree all ingredients (I do this in a standard blender in 2 loads.) Pour pureed ingredients back into the stockpot and simmer for an additional 30-45 minutes.
